Description
Discover a vibrant blend of Caturra and Ethiopian coffees, crafted by visionary coffee farmer Julio César Madrid at the award-winning Finca Milán.
Madrid utilizes a groundbreaking nitrogen-washed coffee process, using specialized cultures and nitrogen fermentation to enhance the flavor of each coffee cherry, resulting in rich, juicy fruit notes such as refreshing watermelon and sweet blueberry.

About the Nitrogen-Washed Coffee Process:
Ripe coffee cherries are cooled to 12°C to preserve flavor, then deground and fermented in a bioreactor with selected yeast and bacteria. Nitrogen injection stimulates microbial activity while temperature, acidity, and Brix levels are monitored. The beans are sun-dried to a moisture content of 40% and then mechanically dried to a moisture content of 10-12%. After a 45-day rest period, they are hulled and prepared for export, ensuring their vibrant flavor.
